For example, when the grapes have been harvested, he lets them "rest" for a day, as they did from the times of Hesiod (roughly 700 B.C.) right up to the brink of industrialization. Maybe the ancients knew something we don't, because his wines are very popular with wine critics like Robert Parker. |
