WINE =======: 2001 Honig Cabernet Sauvignon Tasting Date: 2004-12-23 Varietal : 95% Cab Sauv., 3% Petit Verdot, 2% Cab Franc Score : 84 Country : USA State : California Region : Rutherford Notes ----- The color is very dark, almost black, but with glints of ruby. At the edges it lightens to a beet color. The nose includes scents of black fruits--blackberry, plum, currants--with a hint of rubber. It has a good dose of tannins, and could probably use some serious aging. The fruits tend towards plum and blackberry, but they're subdued, or perhaps just overwhelmed by the tannins. There's a decent acidity level, but not enough to counter the tannins. There's a hint of bitterness, too. The wine was much improved after an hour or two of breathing, but it was still too tannic. The score reflects its current state, but that could go up considerably when the wine is more mature. Production Notes ---------------- It was aged for 20 months in American oak barrels, 30% new oak.
