WINE =======: 0 Jaume Serra Cristalino Extra Dry Cava AOC : Penedes Tasting Date: 2006-01-01 Varietal : Macabeo, Parellada, Xarello Score : 84 Country : Spain State : Catalonia Region : Alt Penedés Notes ----- This wine suffered a bit by following the Pol Roger; few wines would be able to stand up to that competition. It also didn't help that by the time this was opened, I was pretty much Champagned-out. Still, you could tell that it was a good sparkler. Its color was a very pale yellow, almost clear, with a light, vague citrusy nose with a hint of plastic. The flavor was nice, citrusy, with a very subtle touch of bitterness. The bubbles were fairly small. This is a very good sparkling wine for the price. Production Notes ---------------- 50% Macabeo, 35% Parellada, 15% Xarello Additional Notes ---------------- By law, Cava must be made in the Methode Champenois or Champagne Method. Due to European regulations prohibiting use of that term, Cava is now labeled as Methode Tradicional, which has the same requirements with an added stipulation that cava must age for a minimum of nine months on the lees before release. After researching local yeasts, the winery has taken the extraordinary step of importing their yeast from Champagne, France in order to impart the finest quality to their Cavas. During the dosage stage of production a minimum amount of sweet wine is added to just bring this cava to the Extra Dry threshold.
