WINE =======: 2002 Cakebread Cellars Cabernet Sauvignon AOC : Napa Valley Tasting Date: 2005-07-22 Varietal : Cabernet Sauvignon Score : 91+ Country : USA State : California Region : Napa Valley Notes ----- Deep purple to inky in color; nose of tar with subtle hints of blueberry, black currant and dark red fruits, straw and vegetation; medium to full-bodied with very supple tannins that are non-invasive; the flavor overpowers the structure here and either this wine's balance is off, or it needs more time or something, but it just doesn't seem to have the tannic structure to impress right now. I suspect this is a very good wine that needs more time to develop. Production Notes ---------------- Our 2002 Cabernet Sauvignon is a wine distinguished by patience and persistence. Our years of working with advanced soil and moisture experiment techniques were rewarded as that experience enabled us to manage our vines to their optimum during the growing season. With a blend of 87% Cabernet Saugivnon, 11% Merlot and 2% Cabernet Franc this wine shows aromas of cocoa blackberry and black tea while maintaining a balanced structure with firm tannins.
